Annie’s Mediterranean Lentil Dish Recipe
This is the beauty of the Mediterranean diet. It allows us to create wonderfully flavorful, highly rewarding dishes that are medically proven to be the healthiest in the world. It destroys the notion that diet food cannot comfort the body. It embodies, to the contrary, the opposite. Food can be healthy and TASTE GOOD TOO! They are not mutually exclusive.
Trader Joe’s Steamed Lentils (Ready to Eat Warm or Cold)
use the whole pouch cold
Trader Joe’s Broccoli Slaw (Organic)
1/2 bag or desired proportion
chop in to edible pieces
Trader Joe’s Arugula (Organic)
1/2 to 3/4 of the bag
Feta Cheese (Sheep/Goat Milk)
crumble approximately 1/2 cup
Organic Olive Oil
pour approximately 1/4 cup over contents
Sprinkle approximately 1-Tablespoon or to desired taste
Toss thoroughly and serve with main dish or as a hardy lunch salad.
This provides a nutritious dish of protein, fiber, vegetables and cheese (Sheep’s Milk).
